I would like to ask if FTS in Couchbase v. 5.1+ is production ready or if it is still in a developer preview state.

Hi Darek,
Yes, FTS is production ready and has already deployed with customers.
You may also check out the latest beta versions (5.5) as that has more features and options.

Just to clarify - 5.0 was the first production release - so 5.1 for you is fine.
5.5 was released last month and has some FTS improvements - some potential for significant disk space savings especially.
6.0 beta is now available with more improvements too.
